Below are a number of my favorite Vietnamese vegetarian appetizers (some of which can also be eaten as entrees). Half of these dishes are already healthy the way they are, in terms of having low amounts of sugar, salt, and fat contents. My goal is to improve the remaining dishes by replacing traditional ingredients with more nutritious ones and lower at least one of the following: fat content, carbs or overall Glycemic Index. I will share my results once I’m done experimenting with different ingredients. In the meantime, enjoy these teasers!
