Avocado Toast (on Low Carb Bread)

Avocado Toast

 

This is a quick and easy way to make flavorful and healthy avocado toast for breakfast (or really any meal) or just a snack.  It’s nutritious with high contents of protein and good fats but low amounts of carbs.  Some people use grilled sweet potato as “bread” but I prefer real bread.  Luckily there are some low-carb, nutritious bread available, which I will describe more below.

 

Recipe

Ingredients:

  • 1 ripe avocado
  • 1/4 teaspoon (tsp) salt (more or less depending on your taste)
  • 1/2 tsp agave syrup (or any sugar substitute)
  • 1/2 tsp lime/lemon juice
  • 1 tablespoon (tbsp) garlic powder
  • 1 egg
  • 1 slice of Hemptation Bread
  • Optional: Sriracha/chili powder

 

 

Directions:

  1. Peel the avocado and cut into small-ish pieces (about 1 inch in length) and put into a medium-sized bowl
  2. Use the back of a sturdy fork to mash the avocado pieces until the whole thing becomes a paste-like substance
  3. Add salt and lime juice and mix thoroughly to help preserve the vibrant color. Taste test here to see if you’d like more salt
  4. Add agave syrup and mix thoroughly
  5. Once mixed, add in  garlic powder and chili powder to taste
  6. Toast your slice of bread
  7. Spread the avocado mixture on the bread evenly
  8. Using a non-stick pan (or lightly spray with cooking oil), crack an egg to fry it on low heat.  Put the lid on to quicken the process.  Once all the whites have been cooked (turned solid), turn off stove and take off lid
  9. Scoop the egg onto the toast with avocado and enjoy!

 

Silver Hills Hemptation Bread

 

Hemptation Bread - NutritionAfter trying the few low-carb breads available, I prefer Silver Hills Hemptation Bread.  Not only is it low in carbs, high in protein and vitamins, it also tastes great!  It has a very thin crust (which is great for those that don’t like crusts) and the bread is soft and fluffy.  I like my breads to have some substance and not be so thin:  this bread satisfies that requirement.
