Hi! My name is Tracy and welcome to my humble yet hopefully inspiringly delicious blog! I’ve been a vegetarian since I was a kid and have been one for 20 years. It started out as not wanting to harm animals and over the years have seen healthy benefits so it’s become a healthy way of life for me.

When I first started becoming a vegetarian, there were very few restaurants that cater to vegetarians or even have any vegetarian options on their menu (other than salads ?, and even then all their salads may have meat in them ??) so it was tough to eat out. Luckily my mom could make the vegetarian version of all my favorite foods growing up so I didn’t have to live without. I can’t bother my mom forever and I’m unfortunately not as patient as her (when it comes to cooking) so I can’t recreate all of her recipes. 

Even though in the last 5 or so years, healthy eating trends have started becoming more prominent and many restaurants have become vegetarian-friendly, many vegetarian options out there still contain too much carb or too much processed food.  Therefore, I’ve been trying to find and/or improvise healthy recipes that would still retain the deliciousness of the original dish while being easier and quicker to make.  I know many people who also would prefer not spend too much time cooking but still have healthy home-cooked foods to eat so I’ve decided to share some of the recipes that I know and love.
