Recipe
Sauce
- 3 tablespoon (tbsp) soy sauce
- 3 tbsp agave syrup
- 1 tbsp vinegar
- 2 teaspoon (tsp) sesame oil
- 2 tbsp mushroom/vegetable sauce
- 4 cloves of crushed garlic (or garlic powder)
- Optional: Sriracha/chili pepper
Directions:
- Put all wet ingredients into a large bowl and mix thoroughly
- Once mixed, add in garlic (or garlic powder) to taste
- If you like spicy, then add in Sriracha or chili pepper of your choice
Soba Noodles
Cook noodles according to instructions on package. Typically, you should boil water to a rolling boil, then put in the noodles and cook for 3 – 5 minutes, depending on how soft you like your noodles. Once done, pour noodles into a strainer and rinse with cold water for a minute while stirring noodles around to make sure they don’t stick together.

- Avocado (cut into long slices)
- Mango (cut into medium cubes)
- Tomato (dice into small cubes)
- Scallions (dice into small pieces)
- Cucumber (cut into slightly thick rounds)
- Lettuce
