Soba Noodle Salad

Sauce

  • 3 tablespoon (tbsp) soy sauce
  • 3 tbsp agave syrup
  • 1 tbsp vinegar
  • 2 teaspoon (tsp) sesame oil
  • 2 tbsp mushroom/vegetable sauce
  • 4 cloves of crushed garlic (or garlic powder)
  • Optional: Sriracha/chili pepper

Directions:

  1. Put all wet ingredients into a large bowl and mix thoroughly
  2. Once mixed, add in garlic (or garlic powder) to taste
  3. If you like spicy, then add in Sriracha or chili pepper of your choice

Soba Noodles
Cook noodles according to instructions on package. Typically, you should boil water to a rolling boil, then put in the noodles and cook for 3 – 5 minutes, depending on how soft you like your noodles. Once done, pour noodles into a strainer and rinse with cold water for a minute while stirring noodles around to make sure they don’t stick together.

Vegetables & Fruits (Optional)

  • Avocado (cut into long slices)
  • Mango (cut into medium cubes)
  • Tomato (dice into small cubes)
  • Scallions (dice into small pieces)
  • Cucumber (cut into slightly thick rounds)
  • Lettuce
  • Sesame Seed
