French Flan (Xuan Hong Recipe)

This flan recipe is from Xuan Hong who owns a Vietnamese restaurant in San Jose and has a YouTube cooking channel. It is delicious the way with how light and smooth the flan tastes, as well as how both the flan and the caramel sauce is only lightly sweet that makes eating it so addicting! Even though the video below has her speaking Vietnamese but you can see the whole process clearly and when combined with the recipe below, it will be easy to follow.

Recipe

Caramel

  • ½ cup sugar
  • 2 tablespoons water

Directions:

  1. Put sugar & water in pot and cook on stove. Turn off heat when sugar turns yellow
  2. Quickly pour caramelized sugar into ceramic or glass molds/cups
  3. Wait about 10 minutes for caramelized sugar to cool and become stiff

Flan

  • 3 whole eggs
  • 3 egg yolks
  • 1 tablespoon rum
  • ½ cup sugar
  • 2 ½ cups milk
  • 1 packet vanilla

Directions:

  1. Put yolks, eggs, sugar and vanilla in bowl to mix with a whisk until combined
  2. In another pot, put in milk and heat it up until lightly boiled
  3. Gradually pour milk into egg mixture and mix while pouring
  4. Pour in the rum and mix a bit
  5. Pour the mixture through a sifter into another bowl. Then pour into the molds/cups already having the caramel
  6. Put these molds into a big ceramic casserole-type dish
  7. Pour boiled water into the big dish to half the height of the molds
  8. Turn oven to 320 degrees and bake for 1 hour
